Un método sencillo para glasear las verduras. En este caso lo hago con nabos, que quedarán caramelizados y ligeramente translúcidos. Recetas de nabos glaseados:
-1kg de nabos frescos
-100g de azúcar
-50g de mantequilla semi-salada
-sel
-el zumo de medio limón
En primer lugar, hay que pelar los nabos con cuidado y lavarlos.
Poner la mantequilla en un cazo a fuego moderado.
Añadir los nabos escurridos y limpiados.
Añadir el zumo del medio limón.
A continuación, añadir el azúcar (en la foto, no hay mucho, ya que sólo tengo un tercio de la receta y el azúcar ya estaba disuelto) y la sal normalmente.
A continuación, añada agua para cubrir completamente los nabos.
A continuación, se deja cocer hasta que se haya eliminado toda el agua.
En este momento la mantequilla empezará a caramelizar los nabos que se han estado cocinando en el agua con azúcar.
Cuando los nabos se caramelicen, añadir más agua para disolver el caramelo que lo coloreará.
Volver a evaporar el agua y caramelizar de nuevo. Se puede añadir un chorrito de agua para disolver el caramelo y dejar que los nabos se coloreen en el agua caramelizada. Repite la operación hasta que tengas unos bonitos nabos caramelizados y translúcidos.
En cualquier caso, deje que el agua se evapore para que los nabos queden bien cubiertos de mantequilla y no de agua de cocción. Servir inmediatamente con carne y otras verduras…
