Um método simples para vidrar legumes. Faço isto aqui com nabos, que depois serão caramelizados e ligeiramente translúcidos! Temos frequentemente um preconceito bastante negativo em relação aos nabos, apesar de serem deliciosos. E que cheiro agradável na cozinha! Pode aplicar o mesmo método com cenouras ou vegetais que podem ser cozinhados durante muito tempo. Em qualquer caso, esta receita é perfeita para acompanhar, por exemplo, carne vermelha. Receitas para nabos vidrados:
-1kg de nabos frescos
-100g de açúcar
-50g de manteiga semi-salgada
-sel
-o sumo de meio limão
Primeiro, descascar cuidadosamente os nabos e lavá-los.
Colocar a manteiga numa caçarola em lume moderado.
Acrescentar os nabos drenados e limpos.
Acrescentar o sumo do meio limão.
Em seguida, adicionar o açúcar (na foto, não há muito, pois só tenho um terço da receita e o açúcar já estava dissolvido) e sal normalmente.
Em seguida, adicionar água para cobrir completamente os nabos.
Depois deixar cozinhar até que toda a água tenha sido removida.
Nesta altura, a manteiga começará a caramelizar os nabos que têm estado a cozinhar na água com açúcar.
Quando os nabos caramelizados, adicionar mais água para dissolver o caramelo que o irá colorir.
Evaporar novamente a água e caramelizar novamente. Pode-se adicionar um traço de água para dissolver o caramelo e deixar os nabos colorir na água cor de caramelo. Repita até ter belos nabos caramelizados e translúcidos.
Em qualquer caso, deixar a água evaporar para que os nabos sejam bem revestidos com manteiga e não com água de cozedura. Servir imediatamente com carne e outros legumes…
