¡¡Aquí tienes una receta extra sencilla que refleja a la perfección la primavera con estos deliciosos espárragos verdes ligeramente crujientes!!
El beneficio de la receta. reside principalmente en la salsa muselina de cebollino.
Receta de «espárragos con salsa muselina» para 4 personas:
-500g de espárragos -1 huevo -1 cucharadita colmada de mostaza -100g de aceite -15g cebollino picado -sal pimienta
Cortar los espárragos a 6 o 7 cm de su base. Lavarlos bien.
Y cocerlos al vapor durante 12 minutos. Los prefiero todavía verdes y ligeramente firmes. Si prefiere más espárragos cocidos, continúe cocinando durante 5 minutos.
Consejo de Bernard: para conservar el color y el crujido de los espárragos, hay que pararlos sumergiéndolos en agua helada (un cuenco de agua fría con unos cubitos de hielo).
Mientras tanto, preparar la muselina de hierbas. Separar la yema de la clara. En realidad es solo una manoyaise con clara de huevo. Poner la yema, la mostaza, la sal y la pimienta en un bol.
Consejo de Bernard: La mayonesa no fallará si los ingredientes son ¡a temperatura ambiente! En cualquier caso, los huevos normalmente no se conservan en el frigorífico. De lo contrario, ¡deje reposar la yema y la mostaza en el recipiente hasta que estén a temperatura ambiente!
Añadir el aceite en un chorro fino mientras se mezcla con una batidora eléctrica. O batidor manual con mucha grasa de codo! Tienes que verter los 100g de aceite (digo 100g porque hice el «pif» pensando en el antes y el después de esta receta y había usado 100g!) en pequeñas cantidades. Si no estás familiarizado con la mayonesa, ¡solo tienes que esperar a que la salsa tome un aspecto mate y no brillante antes de agregar el resto del aceite!
En otro tazón, bata la clara de huevo a punto de nieve. Agréguelo a la mayonesa y mezcle suavemente, levantando la salsa, ¡como para una mousse!
Agregue las cebolletas finamente picadas.
Mezcle bien y refrigere hasta que esté listo para servir.
¡Sumerja un espárrago aún tibio en la salsa! ¡La primavera está aquí!
