Esta é uma receita extra-simples que reflecte perfeitamente a Primavera com estes espargos verdes deliciosos e ligeiramente crocantes!
O interesse da receita reside principalmente em o molho chive mousseline.
Receita de “espargos em molho de mousseline” para 4 pessoas:
-500g de espargos -1 ovo -1 colher de chá de mostarda amontoada -100g de óleo -15g de cebolinho picado -sal, pimenta
Cortar os espargos a 6 a 7 cm da base. Lavá-los bem.
E vaporizá-los durante 12 minutos. Prefiro-os ainda verdes e ligeiramente firmes. Se se preferir mais espargos cozidos, cozinhar por mais 5 minutos.
O conselho de Bernard: Para manter a cor e a consistência estaladiça dos espargos, deve-se deixar de os cozinhar, mergulhando-os em água gelada (uma tigela de água fria com alguns cubos de gelo dentro).
Entretanto, preparar a linha de ervas. Separar a gema do branco. De facto, é simplesmente um maneirismo com o branco na neve. Colocar a gema, mostarda, sal e pimenta numa tigela.
O conselho de Bernard: O maoynnaise não falhará se os ingredientes estiverem à temperatura ambiente! Em qualquer caso, os ovos não são normalmente guardados no frigorífico. Caso contrário, deixem a gema e a mostarda ficar na tigela até à temperatura ambiente!
Adicionar o óleo num fluxo fino enquanto se mistura com um misturador eléctrico. Ou com um batedor de mão com muita gordura de cotovelo! É preciso deitar os 100g de óleo (digo 100g porque estava a pensar antes e depois para esta receita e usei 100g!) em pequenas quantidades. Se não estiver familiarizado com maionese, basta esperar que o molho fique baço e não brilhe antes de adicionar mais óleo!
Numa tigela separada, bater as claras de ovo até ficarem firmes. Adicione-o à maionese e misture suavemente, levantando o molho tal como uma mousse!
Acrescentar o cebolinho finamente cortado.
Misturar bem e guardar no frigorífico até estar pronto a servir.
