Aquí tiene dos recetas de mousses de chocolate. Uno es muy aireado, y el otro un poco más firme. En cualquier caso, estas recetas son fáciles de preparar y deliciosas de comer.
Receta de «mousse de chocolate» para 4 personas:
Receta «Airy»: -200g de chocolate negro al 70% -6 huevos -20g de mantequilla salada
Receta «un poco más firme»: -250g de chocolate negro al 70% -5 huevos -10g de mantequilla salada -20g de manteca de cacao
En cualquier caso, este es el proceso. Derretir el chocolate y la mantequilla (salada o de cacao) en el microondas o al baño María. Añadir un poco de mantequilla hará que el chocolate no se endurezca inmediatamente al añadir la yema de huevo. Y en el caso de la manteca de cacao, para congelar un poco más la espuma.
Separar las claras de las yemas. Batir las claras a punto de nieve.
Añadir las yemas una a una al chocolate derretido. el chocolate no debe estar caliente
Añadir las claras de huevo batidas a punto de nieve a la mezcla de chocolate. Mezclar con una espátula, levantando bien la masa para que las claras no se vuelvan a caer.
Vierta la mousse en ramequines individuales o en un bol.
Dejar en un lugar fresco durante al menos 5 horas.
