Aqui estão duas receitas de mousses de chocolate. Um é muito arejado, e o outro um pouco mais firme. Em qualquer caso, estas receitas são fáceis de preparar e deliciosas de comer!
Receita de “mousse de chocolate” para 4 pessoas:
Receita “Airy”: -200g de chocolate preto 70% -6 ovos -20g de manteiga com sal
Receita “um pouco mais firme”: -250g de 70% de chocolate preto -5 ovos -10g de manteiga com sal -20g de manteiga de cacau
Em todo o caso, este é o processo. Derreter o chocolate e a manteiga (salgada ou de cacau) no microondas ou em banho-maria. A adição de um pouco de manteiga irá garantir que o chocolate não endurece imediatamente com a adição da gema de ovo. E, no caso da manteiga de cacau, para congelar um pouco mais a espuma.
Separar os brancos das gemas. Bater as claras de ovo até ficarem firmes.
Adicionar as gemas uma a uma ao chocolate derretido. o chocolate não deve estar quente!
Acrescentar as claras de ovo rigorosamente batidas à mistura de chocolate. Misturar com uma espátula, levantando bem a massa para que as claras de ovo não caiam para trás!
Verter a mousse em ramequins individuais ou numa tigela.
Deixar num local fresco durante pelo menos 5 horas.
