Como habrás notado, ahora estoy posteando un poco menos y, sin embargo, estoy cocinando más de lo habitual. Estoy escribiendo mi cuarto libro, que saldrá en octubre, y mi editor en Flammarion ya me está hablando del quinto (¡vuelvo a mi amor por la dulzura!). Pero esto es sólo temporal, pronto volveré a mi velocidad de crucero y pronto podré ofreceros de nuevo vídeos en directo.
Llevo mucho tiempo soñando con hacer una mousse de caramelo de mantequilla salada. Es más una crema rica que una mousse de chocolate clásica (mi receta AQUÍ). Ya me resulta difícil resistirme al chocolate fundido, pero con caramelo por encima, ¡ni siquiera lo intento!
Receta para 6 personas :
120 g de chocolate con leche
80 g de chocolate negro
75 g de mantequilla semisalada
50g de salsa de caramelo de mantequilla salada (receta AQUÍ)
6 huevos
1/4 de cucharadita de sal
30g de chips de caramelo (salidou)
Derretir los chocolates juntos. Al baño maría o en el microondas en incrementos de 30 segundos.
Puedes añadir la mantequilla directamente para ayudar al proceso de fusión.
Y ahí lo tienes. A estas alturas, suelo tener mucho en mis manos…
Añadir la salsa de caramelo de mantequilla salada. La receta está ahí.
Separar las yemas de las claras y verter las yemas en el chocolate fundido.
Batir las claras de huevo con la sal. Sin embargo, tenga cuidado de no superar los 180 g de blanco en total.
Una vez que estén duras, añádelas con cuidado.
Levantar bien para que no se caiga.
Añade las virutas de caramelo si las tienes a mano.
Mezclar una última vez y verter en 6 cuencos. Espolvorear con más chispitas. Puedes ponerlos en la superficie en el último momento, de lo contrario se licuarán con la humedad. Enfriar durante al menos 4 horas antes de servir.
