Como devem ter reparado, estou a afixar um pouco menos agora e, no entanto, estou a cozinhar mais do que o habitual. Estou a meio da escrita do meu 4º livro, que será lançado em Outubro, e o meu editor no Flammarion já me fala do 5º (de volta ao meu amor pela doçura!!!). Mas isto é apenas temporário, em breve estarei de volta à minha velocidade de cruzeiro e em breve poderei oferecer-vos novamente vídeos ao vivo.
Há muito tempo que sonho em fazer uma mousse de caramelo com manteiga salgada. Isto é mais como um creme rico do que uma mousse clássica de chocolate (a minha receita AQUI). Já tenho dificuldade em resistir ao chocolate derretido, mas com caramelo por cima, já nem sequer tento!
Receita para 6 pessoas :
120g de chocolate de leite
80g de chocolate preto
75g de manteiga semi-salgada
50g de molho de caramelo de manteiga com sal (receita AQUI)
6 ovos
1/4 colher de chá de sal
30g de chips de caramelo (salidou)
Derreter os chocolates juntos. Quer num banho de água ou num forno de microondas em incrementos de 30 segundos.
Pode adicionar a manteiga directamente para ajudar o processo de derretimento.
E aí o tem! Nesta fase, tenho normalmente muito nas minhas mãos.
Acrescentar o molho de caramelo de manteiga salgada. Para a receita, está ali!
Separar as gemas dos brancos e verter as gemas para o chocolate derretido.
Bater as claras de ovos com o sal. No entanto, tenha cuidado para não exceder os 180g de branco no total.
Uma vez endurecidos, adicioná-los suavemente.
Levantar bem de modo a não cair para trás.
Adicione os chips de caramelo se os tiver em mãos.
Misturar uma última vez e verter em 6 taças. Polvilhar com mais salpicos. Pode colocá-los na superfície no último momento, caso contrário liquefazem-se com a humidade. Arrefecer durante pelo menos 4 horas antes de servir.
