Había probado estos pequeños «tatines» de foie gras, pan de especias y manzanas en Burdeos (ver el viaje culinario: ¡Burdeos!). Así que intenté hacer esta receta de nuevo y llegué a este resultado. ¡Estos mini-tatines se convertirán en un clásico para mí porque estaban simplemente deliciosos! Una receta perfecta si sobra foie gras después de las fiestas, o para para prepararlo de forma original. ¡Cocino las manzanas en la grasa del foie gras (la grasa amarilla) con especias y luego las flambeo en calvados antes de que se caramelicen lentamente antes de que encuentre su lugar en una suave rebanada de foie gras semicocido!
Receta de Tatines de Foie Gras:
-4 rebanadas de pan de jengibre -4 rebanadas de foie gras (mantener la grasa amarilla en la parte superior) -3 o 4 manzanas 2-3 buenas pizcas de mezcla de 4 especias -1/2 vaso de coñac o calvados -10g de azúcar -sal pimienta
Cortar rodajas no muy gruesas de pan de jengibre. Con un círculo de 6 cm, cortar directamente en la rebanada como un cortador de galletas.
Haz lo mismo con las rodajas restantes.
Cortar 4 buenas lonchas de foie gras semicocido. Empuja la rebanada en el círculo…
A continuación, rellena los huecos con las piezas restantes. Reservar en la nevera.
Para cocinar las manzanas, utilice la grasa amarilla de las lonchas de foie gras. Utilice el equivalente a una cucharada sopera.
Cortar las manzanas en cuartos y luego en trozos pequeños.
Poner la sartén a fuego bastante alto (¡pero cuidado!). Añadir las manzanas a la grasa derretida.

A continuación, deje que las manzanas se cocinen hasta que algunas se derritan y se caramelicen.
Dejar enfriar completamente . Rellenar los círculos con la salsa de manzana.
Alise la superficie con una cuchara. Dejar en un lugar fresco durante al menos tres horas.
