كنت قد ذاقت هذه “تاتين” الصغيرة من فطائر فوا جرا وخبز الزنجبيل والتفاح في بوردو (انظر رحلة الطهي: بوردو! ). لذلك حاولت إعداد هذه الوصفة مرة أخرى وحصلت على هذه النتيجة. ستصبح هذه التينات الصغيرة كلاسيكية بالنسبة لي لأنها كانت لذيذة بكل بساطة !! وصفة مثالية إذا كان هناك الكثير من فطائر فوا جرا بعد العطلة أو من أجلها استوعبها بطريقة أصلية. أطبخ التفاح في دهن فوا (الدهن الأصفر) مع التوابل ثم يشعل مع الكالفادوس قبل الكراميل ببطء من قبل لايجاد مكانهم على شريحة ناعمة من كبد الأوز شبه المطبوخ!
وصفة فطائر فوا جرا تاتينز:
-4 شرائح من خبز الزنجبيل -4 شرائح من كبد الأوز (احتفظ بالدهن الأصفر في الأعلى) -3 أو 4 تفاحات -2 أو 3 رشات جيدة من 4 خلطة بهارات -1/2 كوب هضمي من كونياك أو كالفادوس – 10 جرام سكر -ملح فلفل
لا تقطع شرائح سميكة جدًا من خبز الزنجبيل. مع دائرة 6 سم ، تقطع مباشرة إلى الشريحة مثل قاطعة البسكويت.
افعل الشيء نفسه مع بقية الشرائح.
قطع 4 شرائح جيدة من فطائر فوا جرا نصف مطبوخة. ادفع الشريحة إلى الدائرة …
ثم املأ الثقوب بالقطع المتبقية. احجز في الثلاجة.
لطهي التفاح ، استخدم الدهون الصفراء من شرائح فوا جرا. ضعي ما يعادل ملعقة كبيرة.
نقطع التفاح إلى أرباع ثم إلى قطع صغيرة.
ضع المقلاة على نار عالية إلى حد ما (راقبها على أي حال !!). أضف التفاح إلى الدهون المذابة.
