Aquí está mi versión muy personal de macarrones de vainilla. No sé cuántas veces he experimentado con esta receta para obtener este resultado. Quería un sabor a vainilla muy dominante sin nada más. Un famoso pastelero nos ofrece una receta a base de chocolate blanco, ¡pero me parece que sólo se puede oler! ¡Espero que mi receta te haga reaccionar bien!
Receta de macarrones de vainilla para unos treinta macarrones:
Se puede añadir una pizca de vainilla en polvo al tanto por tanto.
Este es el óxido de titanio que permitirá que los macarrones permanezcan blancos durante la cocción.
Continúe con el relleno de vainilla. Poner el huevo y 50g (de los 125g) en un bol. Batir ligeramente y añadir la harina de maíz.
Sumergir la hoja de gelatina en agua fría.
Poner en un cazo los 75 g de azúcar con el agua y la vaina de vainilla partida por la mitad y raspada. Añade también el azúcar de vainilla y la vainilla en polvo. Hervir. Detener la cocción y dejar infusionar durante 10 minutos fuera del fuego.
Verter el almíbar sobre la mezcla de huevos. Mezclar bien y volver a ponerlo en la sartén. Cocinar suavemente, sin dejar de remover. Hervir suavemente hasta que la mezcla espese. En este punto, añadir la gelatina escurrida.
Mezclar bien, luego añadir el óxido de titanio (utilizo este colorante para amplificar el contraste con los granos de vainillina) fuera del fuego.
Añadir el polvo de almendra.
Por último, añadir la mantequilla en trozos.
Mezclar bien y dejar enfriar. Cuando el relleno empiece a cuajar, ponlo en una manga pastelera y rellena los macarrones. Dejar en un lugar fresco durante la noche antes de comer.
