Aqui está a minha versão muito pessoal de vanilla macaroons. Não sei quantas vezes já experimentei esta receita para obter este resultado. Eu queria um sabor de baunilha muito dominante sem mais nada. Um famoso pasteleiro oferece-nos uma receita à base de chocolate branco, mas acho que só se consegue cheirá-la! Espero que a minha receita lhe dê uma boa reacção!
Receita de macaroons de baunilha para cerca de trinta macaroons:
Uma pitada de pó de baunilha pode ser adicionada a tanto por tanto.
Este é o óxido de titânio que permitirá que os macaroons permaneçam brancos durante a cozedura.
Contiinue com o recheio de baunilha. Colocar o ovo e 50g (dos 125g) numa tigela. Bater levemente e adicionar a farinha de milho.
Mergulhar a folha de gelatina em água fria.
Colocar os 75g de açúcar com a água e a vagem de baunilha, divididos ao meio e raspados, numa caçarola. Adicionar também o açúcar baunilhado e o pó de baunilha. Fervura. Parar de cozinhar e deixar infundir durante 10 minutos fora do lume.
Verter a calda sobre a mistura de ovos. Misturar bem e depois voltar para a panela. Cozinhar suavemente, nunca parando para mexer. Ferver suavemente até a mistura engrossar. Nesta altura, adicionar a gelatina de espremer.
Misturar bem, depois adicionar o óxido de titânio (uso esta coloração para amplificar o contraste com os grãos de vanilina) fora do calor.
Acrescentar o pó de amêndoa.
Finalmente, adicionar a manteiga em pedaços.
Misturar bem e deixar arrefecer. Quando o enchimento começar a pôr-se, colocá-lo num saco de tubagem e depois encher os macaroons. Deixar no frigorífico durante a noite antes de comer.
