Acabo de regresar de un fabuloso viaje culinario a Grecia, a la isla de Tinos, en las Cícladas. Me aseguraré de publicar este viaje pronto. En el camino de vuelta me detuve en Atenas, donde comí un plato delicioso: kritharoto con gambas. Me puse a hacerla de nuevo en el taller para daros la receta. Visualmente, es un poco complicado de fotografiar, pero el plato es simplemente excelente. Confía en mí, especialmente si te gustan las gambas. Por una vez en mi blog de cocina, voy a utilizar la pequeña pasta ourzo, o lenguas de pájaro, que al final tienen muchos nombres dependiendo de su procedencia. Se prepara a la manera de un risotto, con un caldo lleno de sabor.
Receta para 4 personas:
Caldo :
4 cucharadas de aceite de oliva
12 gambas grandes o 24 gambas más pequeñas
1 cebolla
4 dientes de ajo
1,7 litros de agua
6 hojas de laurel
una buena pizca de pistilos de azafrán
Para el kritharoto :
40g de mantequilla
3 cucharadas de aceite de oliva
1/2 cebolla blanca
350 g de pasta «lengua de pájaro», risetti, ourzo, riseni
150 ml de vino blanco
1 tomate
50 g de queso rallado (kefalotyri para quedarse en Grecia, o parmesano para simplificar)
un poco de cebollino
sal pimienta
Para esta receta, utilicé camarones muy grandes. Vierta el aceite de oliva en una sartén grande.
Caliente a fuego alto y coloque las gambas encima. Aquí sólo utilicé 6 porque hice la mitad de mi receta, ¡pero sigue las proporciones para 4!
Añade sal y pimienta.
Después de 2 minutos, dales la vuelta para que se cocinen por el otro lado a fuego fuerte.
Un bonito colorido y ya se acabó para las gambas.
En la misma sartén, sin lavarla, verter la cebolla pelada y picada. No importa lo bien que se haga porque es para el caldo.
Todavía a fuego bastante alto, fríelas en el jugo de las gambas con el ajo picado.
Pelar las gambas.
Poner las «cáscaras de las gambas» en la sartén. Dejar cocer durante 5 minutos.
Verter la mezcla en un cazo con el agua y el azafrán y volver a ponerlo a fuego moderado.
Añadir las hojas de laurel.
Dejar cocer a fuego lento durante unos veinte minutos. ¡Ya huele muy bien!
Después de un rato, vierta de nuevo en un recipiente, colando bien. Debería tener al menos 1,5 litros de caldo.
Para la pasta, ¡aquí está! Se pueden encontrar fácilmente en las tiendas. Tienen muchos nombres según la región o el país de que se trate.
En una cacerola grande, vierta la mantequilla, el aceite de oliva y la mitad de una cebolla, finamente picada.
Dejar cocer a fuego moderado.
Las cebollas deben colorearse ligeramente.
Vierta la pasta.
Mezclar bien para cubrir con grasa mientras se cocina durante 2 minutos.
Vierta el vino blanco.
En cuanto se absorba el vino, verter un poco de caldo. Remuévalo siempre bien antes de verterlo. Cocinar esta vez a fuego lento, removiendo regularmente. Cuando la pasta se haya absorbido casi por completo, vierta más caldo.
Prepara el tomate. Vaciar la pulpa de la misma.
A continuación, córtalo en trozos pequeños.
Cuando esté a la mitad del caldo, añadir los trozos de tomate.
Rallar el queso. En Grecia, utilizarán kefalotyri, pero aquí se puede utilizar parmesano fresco. Pero shhh, ¡no lo digas muy alto!
Viértalo en la sartén con un poco de cebollino picado.
Puede que no sea necesario utilizar todo el caldo. La pasta suele cocinarse en 9 minutos. Depende de ti si quieres un plato muy cremoso, en cuyo caso tendrás que utilizar casi todo el caldo, o si quieres un plato más sustancioso con menos caldo. Para mí, fueron casi 1,5 litros de caldo.
Vuelva a colocar las gambas y cocínelas a fuego muy lento durante 3-4 minutos para que se calienten en el kritharoto.
