Como ocurre con algunos platos salados, la foto es difícil de hacer y no hace justicia al sabor del katsudon. Plato japonés por excelencia, se compone de carne de cerdo empanada cortada en trozos sobre un lecho de arroz japonés y una salsa de cebolla y dashi con huevos… Realmente sabroso y una visita obligada. Sólo falta obtener los dos ingredientes inusuales, el «dashi» y el pan rallado japonés, el «panko».
Receta de Katsudon para 2 personas:
Cerdo:
-2 lonchas de cerdo en el lomo
-2 cucharadas de salsa de soja
-2 cucharaditas de azúcar
-1 cucharadita de aceite de sésamo
-pimienta
La salsa con cebollas:
-1 cebolla grande
250ml de dashi preparado (1 sobre de 5g para 75cl de agua caliente)
-4 cucharaditas de salsa de soja
-2 cucharaditas de azúcar
-2 cucharaditas de salsa de mirin
-2 o 3 huevos
Freír carne de cerdo:
-farina
-1 huevo
-50g de agua
-Tapicería japonesa «panko»
-una hoja de nori
-una cebolleta
Arroz japonés:
-300g de arroz
-el volumen de agua de cocción del arroz
Estos son los ingredientes que hay que conseguir. Puede encontrarlos en las tiendas de comestibles japonesas de la calle Sainte Anne de París o incluso en Tang.
El «panko» es pan rallado japonés, que en realidad es pan rallado de verdad. También puedes hacerlo tú mismo cogiendo un poco de pan duro y desmenuzándolo…
En cambio, el «dashi» tendrá que comprarlo… ¡Aquí está la imagen para facilitar el alquiler en las tiendas de comestibles! Están disponibles en paquetes que contienen sobres de 5g o 10g…
Comienza golpeando la carne para adelgazarla y ablandarla… Debe ser muy fino.
Una vez extendida la carne, haz pequeños cruces sobre ella con un cuchillo sin cortarla.
Marinar la carne en el azúcar, la salsa de soja, el aceite de sésamo y la pimienta mientras se prepara el resto de la receta.
La preparación del arroz japonés, que es un arroz redondo… Lávala con abundante agua hasta que esté limpia…
Poner la misma cantidad de arroz lavado que de agua fresca en un cazo a fuego lento. Llevar todo a ebullición.
Cuando el agua hierve, se tapa y se deja cocer durante 15 minutos a fuego lento.
Después de 15 minutos, apaga el fuego y deja otros 10 minutos con la tapa puesta.
Mientras se cuece el arroz, prepara la salsa de cebolla. Ponga el azúcar, el mirin y la salsa de soja en un bol pequeño.
Añadir el dashi preparado (5g por 750ml de agua)…
¡La salsa está lista!
Cortar la cebolla por la mitad y luego en rodajas bastante finas.
Poner la salsa y la cebolla en una sartén y cocinar a fuego lento hasta que la cebolla esté translúcida.
Mientras tanto, prepare el empanado de cerdo. Poner el huevo, el agua y la harina en un bol y mezclar bien para eliminar los grumos. La masa debe ser líquida pero recubierta… Sumergir la carne de cerdo en esta pasta.
Retirar la masa sobrante y colocarla en un plato con el panko.
Calentar el aceite en un wok. Cuando el aceite esté a la temperatura adecuada para freír, sumerja la carne en él.
Retirar y escurrir la carne en una toalla de papel.
Cortar la carne en tiras…
Corta también la cebolleta en trozos pequeños.
En la sartén con las cebollas, añadir los huevos batidos en forma de tortilla.
Colocar la carne (en la foto sólo hay una loncha de cerdo, pero en la receta serán dos…) sobre la salsa con los huevos. Espolvorear con cebollas tiernas.
Dejar cocer a fuego lento sólo para cocer el huevo (no debe estar completamente cocido).
Poner el arroz en dos cuencos individuales y colocar una loncha de cerdo con cebolla sobre el arroz.
Vierta un poco de salsa por encima y espolvoree con pequeños trozos de una hoja de nori. Servir muy caliente.
