Estuve en Marruecos la semana pasada y volví con un montón de recetas nuevas. Sugiero estas originales harchas, rellenas de tapenade casero. ¡Una delicia para el aperitivo! Las harchas son tortas de sémola de trigo duro muy consumidas en todo el Magreb. Esta versión con tapenade me la regaló mi amiga Lala Meryem, y Bouchra. Me gustaría agradecerles de nuevo que hayan accedido a compartir esta deliciosa receta con nosotros. Se pueden cocinar en una sartén o incluso en el horno.
Ingredientes :
Tapenade :
225 g de aceitunas negras
5 ramitas de perejil
1 medio diente de ajo
25g de anchoas
10g de aceite de oliva
Harchas :
620 g de sémola fina (¡no de cuscús!)
100 g de mantequilla semisalada
60g de aceite
1 cucharadita de sal
2 paquetes de levadura en polvo
175 g de leche entera
150g de agua
En primer lugar, prepare el tapenade.
Ponga las aceitunas, el ajo, el perejil y el aceite de oliva en un recipiente o batidora.
Puedes añadirle anchoas.
Mezclar para obtener un tapenade no demasiado fino.
Pruébalo, ¡ya está delicioso!
Verter la sémola fina en un recipiente.
Derretir la mantequilla.
Verter el aceite y la mantequilla derretida en la sémola.
Añadir la sal y mezclar con la mano para impregnar la sémola con la grasa.
Reservar 175 g de esta mezcla en un recipiente aparte. Esto nos ayudará en el futuro. Verter la levadura en polvo en la sémola restante (¡no en los 175 g!).
Vierta el agua y la leche.
Mezclar y dejar que la sémola absorba el líquido durante unos veinte minutos.
Coge una bola del tamaño de un huevo. Hacer una cavidad en el centro.
Colocar el tapenade encima.
Luego, ciérrala con cuidado.
Tomar un poco de la sémola que se ha reservado.
Y espolvorear la superficie de la bola.
Colocar la bola en una sartén caliente y aplanarla con la mano hasta formar un pequeño disco.
Haz lo mismo con el resto de los ingredientes. Dar la vuelta a las hamburguesas cuando empiecen a dorarse.

También puede poner las bolas sin aplanar en el horno a 180°C durante 20-25 minutos.
Las harchas serán aún más crujientes.
Le garantizo que tendrá éxito en el aperitivo. Si es necesario, volver a calentarlos durante 10-15 minutos en el horno a 165°C. A continuación, encontrará el delicioso crujido.
