Estive em Marrocos na semana passada e voltei com muitas receitas novas. Sugiro estas harchas originais, recheadas com tapenade caseira. Um deleite para o aperitivo! As harchas são bolos de sêmola de trigo duro amplamente consumidos em todo o Magrebe. Esta versão com tapenade foi-me dada pela minha amiga Lala Meryem, e Bouchra. Gostaria de lhes agradecer mais uma vez por concordarem em partilhar esta deliciosa receita connosco aqui! Podem ser cozidos numa panela ou mesmo no forno.
Ingredientes:
Tapenade :
225g de azeitonas pretas
5 raminhos de salsa
1 meio dente de alho
25g de anchovas
10g de azeite de oliva
Harchas :
620g de sêmola fina (não sêmola couscous!)
100g de manteiga semi-salgada
60g de óleo
1 colher de chá de sal
2 pacotes de fermento em pó
175g de leite inteiro
150g de água
Primeiro, preparar a tapenada.
Colocar as azeitonas, alho, salsa e azeite num recipiente ou liquidificador.
Pode adicionar-lhe anchovas!
Misturar para obter uma tapenada que não seja demasiado fina.
Prove-o, já é delicioso!
Verter a sêmola fina para um recipiente.
Derreter a manteiga.
Verter o óleo e a manteiga derretida para a sêmola.
Adicionar o sal e misturar à mão para impregnar a sêmola com a gordura.
Reserve 175g desta mistura num recipiente separado. Isto irá ajudar-nos no futuro. Verter o fermento em pó para as restantes sêmolas (não os 175g!).
Verter a água e o leite.
Misturar e deixar a sêmola para absorver o líquido durante cerca de vinte minutos.
Pegar numa bola do tamanho de um ovo. Fazer uma cavidade no centro.
Colocar tapenade em cima.
Depois feche-a cuidadosamente.
Pegue algumas das sêmolas que foram postas de lado.
E borrifar a superfície da bola.
Colocar a bola numa panela quente e achatá-la à mão num pequeno disco.
Faça o mesmo para o resto dos ingredientes. Virar os tapetes quando começarem a dourar.

Também pode colocar as bolas não achatadas no forno a 180°C durante 20-25 minutos.
As harchas serão ainda mais estaladiças.
Garanto-lhe que terá sucesso no aperitivo! Se necessário, reaquecê-las durante 10-15 minutos no forno a 165°C. Encontrará então a deliciosa crocância.
