Mi libro «Je fais mon chocolat maison» (Hago mi propio chocolate) publicado por Solar y prologado por Christophe Michalak salió en medio de un encierro… Actualmente no está disponible en varias plataformas de venta de libros, pero a partir del 11 de mayo podrás pedirlo en tu librería habitual. En 160 páginas, le cuento todo lo que necesita saber para elaborarlo en casa, desde el grano hasta la tableta, en todas sus formas: chocolate negro, chocolate con leche, chocolate blanco, chocolate con leche vegano, chocolate sin azúcar, chocolate con té verde, chocolate con frambuesa, ¡e incluso chocolate sin chocolate pero con café! Pero también chocolates rellenos de praliné y cremas para untar de avellana o pistacho, incluida la Nutella casera e incluso la gianduia. Por supuesto, explico todo sobre el templado, proponiendo varios métodos en cada etapa, dependiendo de su equipo. He desarrollado dos fórmulas casi mágicas para hacer todos los chocolates del mundo. Sólo tienes que poner lo que te gusta y te sale la receta. Por último, te doy muchas recetas de barritas y postres (galletas, magdalenas, milhojas, canelés, chocolate caliente, etc.)…

2-Recetas para barras y chocolates rellenos, para untar
3-Las recetas de postres con chocolate
Con este libro podrás hacer chocolate casero desde el grano hasta la tableta, pero también hacer tabletas sin tener que hacer tu propio chocolate, utilizando chocolate de marca, porque lo sabrás todo sobre el templado.
