Me había estado conteniendo durante años. Cuando pasé por delante de un puesto de gofres de Lieja, se me cayó la baba y pensé que no era razonable, así que me alejé. Cuando por fin tuve mi gofrera, devoré el equivalente a todos esos años de intensa privación. ¡Por fin! Son tan deliciosas, ricas y masticables, con todo ese azúcar caramelizado en la superficie, que casi no me siento culpable. Simplemente no pude resistirme. De todos los gofres, estos son mis favoritos. Con la mantequilla que lleva, no me sorprende. Yo hice mis gofres con una gofrera profesional, pero por supuesto puedes hacerlos en una gofrera más convencional.
Ingredientes para más de una docena de gofres:
500 g de harina T55
30 g de azúcar en polvo
1 cucharadita de levadura de panadería seca (o 10 g de levadura fresca)
2 huevos
220 g de leche semidesnatada
285 g de mantequilla (yo uso la mitad de mantequilla dulce y la mitad de mantequilla semisalada)
250 g de azúcar perlado
Instrucciones:
Vierta la harina, el azúcar en polvo y la levadura seca en el bol de su robot de cocina o en un bol grande.
Mezclar y verter los huevos y la leche.
Amasar la masa durante unos diez minutos con el gancho.
Añadir la mantequilla cortada en trozos.
Continuar amasando durante otros 5 minutos.
Dejar subir la masa durante 1,5 horas con un paño limpio sobre el bol.
Pasada la hora y media, añadir el azúcar perlado y volver a mezclar con el gancho.
Pesar bolas de 100 g.
Enrollarlas en forma de salchichas no muy largas. También puedes pasarlas por un poco de azúcar glas, se caramelizarán aún más.
Para esta receta, he utilizado mi gofrera Krampouz pro. Un poco loco, pero el resultado es genial. También puedes utilizar una gofrera más clásica, te lo aseguro. Yo había introducido la marca Bretón hace mucho tiempo para los panqueques (ver la receta AQUÍ).
Para los gofres de corcho, precalentar la plancha a 180°C.
Colocar un trozo de masa en el centro de las planchas. Si tienes una gofrera profesional, tendrás que meterla primero en el horno, según las instrucciones.
Cerrar la gofrera. Con un profesional, las planchas son muy pesadas y por lo tanto aplastan la masa inmediatamente. Con una gofrera clásica, ciérrela bien presionando.
Si tienes esta opción, dale la vuelta a los hierros.
Dejar cocer durante 5 minutos. Compruebe cuidadosamente el proceso de cocción. Los gofres deben tener un bonito color.
Sácalas con cuidado con un tenedor o una gofrera.
Deja que se enfríen en una rejilla durante 5-10 minutos antes de comerlos.
Puedes recalentarlos al día siguiente pasándolos por la tostadora durante un minuto. Una delicia.
Gofres de Lieja
