Há anos que me vinha a atrasar. Quando passei por um carrinho de waffles Liège, babei-me e pensei que não era razoável, por isso afastei-me. Quando finalmente consegui o meu ferro de waffle, devorei o equivalente a todos aqueles anos de privação intensa! Finalmente! São tão deliciosos, ricos e mastigados, com toda aquela caramelização de açúcar à superfície, que quase não me senti culpado. Simplesmente não pude resistir. De todos os waffles, estes são os meus favoritos. Com a manteiga lá dentro, não me surpreende! Fiz os meus waffles com uma ferro de waffle profissional, mas é claro que os pode fazer numa ferro de waffle mais convencional.
Ingredientes para mais de uma dúzia de waffles:
500g de farinha T55
30g de açúcar refinado
1 colher de chá de levedura de padeiro seca (ou 10g de levedura fresca)
2 ovos
220g de leite semi-desnatado
285g de manteiga (utilizo metade manteiga doce e metade manteiga semi-salgada)
250g de açúcar pérola
Instruções:
Verta a farinha, o açúcar refinado e o fermento seco para a tigela do seu processador de alimentos ou para uma tigela grande.
Misturar e verter os ovos e o leite.
Amassar a massa durante cerca de dez minutos com o gancho.
Acrescentar a manteiga cortada em pedaços.
Continuar a amassar por mais 5 minutos.
Deixar a massa subir durante 1,5 horas com um pano limpo sobre a tigela.
Após as 1,5 horas, adicionar o açúcar pérola e misturar novamente com o gancho.
Pesar bolas de 100g.
Enrole-as em salsichas não muito compridas. Também se pode enrolá-los num pouco de açúcar em pó, eles caramelizarão ainda mais.
Para esta receita, utilizei o meu ferro Krampouz pro waffle. Um pouco louco, mas o resultado é óptimo. Pode também usar uma ferro de waffle mais clássica, garanto-lhe. Eu tinha introduzido a marca Breton há muito tempo atrás para panquecas (ver receita AQUI).
Para os Cork Waffles, pré-aqueça o ferro a 180°C.
Colocar um pedaço de massa no centro dos ferros. Se tiver um ferro de waffle profissional, terá de o colocar primeiro no forno, de acordo com as instruções.
Fechar a ferro de waffle. Com um profissional, os ferros são muito pesados e por isso esmagam imediatamente a massa. Com uma ferro de waffle clássica, feche-a bem, pressionando.
Se tiver esta opção, vire os ferros.
Deixar cozinhar durante 5 minutos. Verificar cuidadosamente o processo de cozedura. Os waffles devem ter uma cor agradável.
Retirá-los cuidadosamente com um garfo ou uma chapa de waffle.
Deixe-os arrefecer numa grade de arame durante 5-10 minutos antes de os comer!
Pode reaquecê-las no dia seguinte, passando-as pela torradeira por um minuto. Uma delícia!
