Después de los «tuiles de coco» y el«pastel de piña y coco«, lógicamente te propongo el «shortbread de coco». A estas alturas ya conoces mi pasión por las galletas de mantequilla. No puedo evitar experimentar. Estas pequeñas galletas no tienen ninguna pretensión, ¡excepto la de regalarte un helado, por ejemplo! También puede imaginarse sumergirlos en chocolate templado para envolverlos y hacerlos aún más calóricos. ¡El resultado es tan crujiente como se puede desear en 5 minutos de trabajo! ¡Ponte a cocinar!
Receta de shortbread de coco:
-200g de harina -70g de coco rallado seco -125g de mantequilla (o 85g de crisco y 40g de mantequilla) -100g de azúcar -25g de huevo -unas gotas de vainilla líquida
Poner el azúcar, la harina y el coco en un bol.
Añadir la mantequilla blanda.
Aquí pongo crisco+mantequilla. Un experimento sencillo, pero que resulta interesante: la mantequilla se nota menos, dejando más espacio al coco.
Añadir los 25 g de huevo y la vainilla líquida.
Basta con mezclar lo suficiente para homogeneizar la masa.
¡Cocine con el método elegido! Puedes extender la masa y cortarla con un cortador de galletas, o (¡como hice yo aquí!) poner la masa en una pistola de repostería y cortar rodajas.
