Con el viaje culinario a Lausana, tenía que poner una receta de fondue suiza. Aquí os doy una receta global, sabiendo que podéis elegir qué tipo de queso añadir en esta receta. Tendrá la posibilidad de hacer una fondue vaudoise, una fondue friburguesa, una fondue de Moitié-Moitié, una fondue de Neuchâtel o una fondue de la Suiza Central.
Aquí están las principales fondues suizas:
Fondue Vaudoise: 100% Gruyère
Fondue Fribourgeoise: 100% Vacherin Fribourgeois
Fondue mitad y mitad: 50% queso Gruyère 50% Vacherin Fribourgeois
-800g de queso -350ml de vino blanco seco -1 diente de ajo 3-4 cucharaditas rasas de fécula de patata (o maicena) -pimienta, nuez moscada -1 vaso pequeño de licor (20 ml) de kirsch (¡no del tipo elegante!) -un chorrito de zumo de limón o una pizca de cremor tártaro
Preparar los quesos y pesarlos sin la corteza. La noche que hice mi fondue, tenía gruyère y vacherin fribourgeois, así que fue una fondue mitad y mitad…
Pele el diente de ajo y frótelo en el fondo y en el lateral de la olla de la fondue.
Disolver la maicena (o la fécula de patata) en un poco de vino blanco tomado de los 350ml.
Ralla el queso y ponlo en una olla de fondue (yo no tenía una a mano, pero lo hice en una olla de cobre de fondo grueso). a fuego lento, añadir inmediatamente el vino blanco seco.
Verter el almidón líquido en el caquelón.
Dejar y añadir zumo de limón (el equivalente a una cucharada) o una buena pizca de cremor tártaro.
El consejo de Bernard El limón o el cremor tártaro son ácidos y ayudan a emulsionar la fondue. En concreto, las grasas del queso (¡y son muchas!) no quieren mezclarse con el vino blanco (agua+alcohol). Al añadir esta acidez se producirá una reacción que dará lugar a una fondue perfectamente homogénea. ¡Y no habrá sabor a limón!
Sazonar con pimienta y rallar la nuez moscada. No añada sal.
Cocinar siempre a fuego lento o moderado, dándole la vuelta con una cuchara de madera.
Cuando la fondue esté… derretida, añade el kirsch (¡todavía no es la fantasía!).
Sin dejar de remover, deje que se cocine y hierva. ¡La fondue se vuelve tan cremosa como usted quiera! Cuanto más tiempo se hierve, más suave se vuelve. Así que tienes que ajustarte a lo que te gusta.
Servir inmediatamente en colocando la olla de la fondue al fuego para mantenerla caliente. Mojar trozos de pan del día anterior (que no se disolverán inmediatamente en la fondue caliente).
