Com a viagem culinária a Lausanne, tive de colocar uma receita de fondue suíço. Dou-vos aqui uma receita global, sabendo que podem escolher o tipo de queijo a acrescentar a esta receita. Terá a possibilidade de fazer um fondue Vaudoise, um fondue Fribourg, um fondue Moitié-Moitié, um fondue Neuchâtel ou um fondue Suíço Central.
Aqui estão os principais fondues suíços:
Fondue Vaudoise: 100% Gruyère
Fondue Fribourgeoise: 100% Vacherin Fribourgeois
Metade e metade fondue: 50% queijo Gruyère 50% Vacherin Fribourgeois
-800g de queijo -350ml de vinho branco seco -1 dente de alho 3-4 colheres de chá de fécula de batata (ou maïzena) -pepper, noz-moscada -1 pequeno vidro licoroso (20ml) de kirsch (não do tipo chique!!) -uma pitada de sumo de limão ou uma pitada de creme de tártaro
Preparar os queijos e pesá-los sem a casca. Na noite em que fiz o meu fondue, tive gruyère e vacherin fribourgeois, por isso era meio fondue e meio fondue…
Descascar o dente de alho e esfregá-lo no fundo e no lado de cima do pote de fondue.
Dissolver o amido de milho (ou amido de batata) num pouco de vinho branco retirado dos 350ml.
Rale o queijo e coloque-o num pote de fondue (não tinha um à mão, mas fi-lo numa panela de cobre de fundo grosso!). em lume brando, adicionar imediatamente o vinho branco seco.
Verter o amido líquido para o caquelon.
Deixar e adicionar sumo de limão (o equivalente a uma colher de sopa) ou uma boa pitada de creme de tártaro.
O conselho de Bernard O limão ou creme de tártaro são ácidos e ajudam a emulsionar o fondue. Em termos concretos, as gorduras do queijo (e são muitas!!!) não querem realmente misturar-se com o vinho branco (água+álcool). A adição desta acidez criará uma reacção que resultará num fondue perfeitamente homogéneo! E não haverá sabor a limão!
Tempere com pimenta e rale a noz-moscada. Não adicionar sal!
Cozinhar sempre em lume brando a moderado, virando com uma colher de madeira.
Quando o fondue estiver…derretido, adicionar o kirsch (ainda não a fantasia!!!).
Enquanto se mexe constantemente, deixar cozinhar e ferver. O fondue torna-se tão cremoso quanto você quiser! Quanto mais tempo for fervido, mais suave se torna. Por isso, tem de se ajustar de acordo com o que gosta!
Servir imediatamente em posicionando o pote de fondue numa chama para o manter quente. Mergulhar pedaços de pão do dia anterior (que não se dissolverão imediatamente no fondue quente).
