Me gusta realmente a veces, porque la simplicidad es a menudo muy exitosa. Mientras ayudábamos a las «Reinas» a cocinar un día, hicimos un pastel de chocolate. El cliente había especificado que quería un pastel muy húmedo y fundente y, sobre todo, sin harina. ¡Elaboramos la receta un poco a ojo y resultó realmente deliciosa! Así que hoy os pongo esta receta en la que la almendra tostada en polvo es un buen sustituto de la harina.
Receta de fondant de chocolate y almendras:
-3 huevos -125g de azúcar glas
-100g de chocolate negro
-70g de chocolate con leche
-180g de mantequilla
-50g de polvo de almendra
Derretir la mantequilla y el chocolate (al baño maría o en el microondas).
Poner el polvo de almendra en una cacerola pequeña.
Y tuesta ligeramente. Dejar enfriar.
Mezclar los huevos con el azúcar glas.
Con la batería eléctrica, será más fácil. Hay que batir durante al menos 5 minutos.
Añadir la mantequilla y el chocolate.
Batir durante otros 2 minutos.
Añadir el polvo de almendra tostada.
Verter en un molde de 20X20cm forrado con papel de horno.
Hornear a 200°C durante 12-15 minutos.
Dejar enfriar completamente y enfriar durante 1 hora antes de desmoldar.
