Eu gosto de realmente por vezes, porque simplicidade é muitas vezes muito bem sucedida. Enquanto ajudávamos as “rainhas” a cozinhar um dia, fizemos um bolo de chocolate. O cliente tinha especificado que queria um bolo muito húmido, derretido, e acima de tudo, um sem farinha. Trabalhámos a receita um pouco no nariz e acabou por ser realmente deliciosa! Por isso, hoje vou dar-vos esta receita na qual a amêndoa torrada em pó é um bom substituto para a farinha.
Receita de fondant de amêndoa de chocolate:
-3 ovos -125g de açúcar de confeiteiro
-100g de chocolate preto
-70g de chocolate de leite
-180g de manteiga
-50g de pó de amêndoa
Derreter a manteiga e o chocolate (numa caldeira dupla ou no microondas).
Colocar a amêndoa em pó numa pequena frigideira.
E brindar com ligeireza. Deixar arrefecer.
Misturar os ovos com o açúcar de confeiteiro.
Com o baterista eléctrico, será mais fácil. Tem de bater durante pelo menos 5 minutos.
Adicionar a manteiga e o chocolate.
Bater por mais 2 minutos.
Adicionar o pó de amêndoa tostada.
Verter para uma forma de 20X20cm revestida com papel vegetal.
Cozer a 200°C durante 12-15 minutos.
Deixar arrefecer completamente e arrefecer durante 1 hora antes de retirar do molde.
