Este es el tercer método del foie gras. ¡Bueno, no es EL tercer método oficial, sólo el tercero en mi blog! Esta es probablemente la más sencilla. Da un resultado tan bueno como los otros métodos y el aspecto del hígado se conserva porque se cocina en su forma natural.
Receta de foie gras, tercer método:
-un foie gras fresco entero -Sal, pimienta (lo esencial) -Alcohol de su elección (coñac, oporto, vino blanco dulce, ron, etc.) -especies
Desvenar el foie gras. También puede comprar un foie gras desvenado, ¡el método será mucho más fácil!
Salpimentar el interior y el exterior del foie gras y sumergirlo ligeramente en el alcohol elegido .
Elija un film estirable resistente a las altas temperaturas (albal fabrica uno muy bueno). Restablecer la forma natural del foie gras.
Envuélvelo generosamente en film transparente. Lo hago 4 veces en una dirección y 4 veces en la otra.
Dejar reposar toda la noche en un lugar fresco.
Al día siguiente, sácala 2 horas antes de cocinarla para que esté a temperatura ambiente. Ponerlo en una cesta de vapor.
Póngalo sobre el agua hirviendo (al vapor) durante 8 minutos para un hígado de 500 gramos o 10 minutos para un hígado de 700 gramos en una dirección, luego déle la vuelta y cocínelo durante otros 8 o 10 minutos. Por lo tanto, se cocina de esta manera durante 16 o 20 minutos dependiendo de su peso.
Retire la cesta de la parte superior del agua hirviendo. Dejar que el hígado se enfríe a temperatura ambiente.
A continuación, guarde el hígado en su envase en un lugar fresco durante al menos 3 días antes de abrirlo.
Se puede congelar después de tres días. El foie gras se congela mejor cocido que crudo.
