Este é o terceiro método do foie gras. Bem, não é O terceiro método oficial, apenas o terceiro no meu blog! Esta é provavelmente a mais simples. Dá um resultado tão bom como os outros métodos e o aspecto do fígado é preservado porque é cozinhado na sua forma natural.
Receita de foie gras, terceiro método:
– um foie gras inteiro fresco -sal, pimenta (o essencial) -Álcool à sua escolha (conhaque, vinho do Porto, vinho branco doce, rum, etc.) -spices
Devein the foie gras. Mais vale comprar um foie gras devined, o método será muito mais fácil!
Adicionar sal e pimenta ao interior e exterior do foie gras e depois embeber levemente no álcool escolhido.
Escolha uma película extensível que seja resistente a altas temperaturas (albal faz um muito bom!). Restaurar a forma natural do foie gras.
Envolvê-lo generosamente em película aderente. Faço-o 4 vezes numa direcção e 4 vezes na outra.
Partir para passar a noite num local fresco.
No dia seguinte, retirá-lo 2 horas antes de cozinhar para que esteja à temperatura ambiente. Colocá-lo num cesto fumegante.
Colocá-lo em cima de água a ferver (a vapor) durante 8 minutos para um fígado de 500 gramas ou 10 minutos para um fígado de 700 gramas numa direcção, depois virá-lo e cozinhar durante mais 8 ou 10 minutos. Cozinha assim durante 16 ou 20 minutos, dependendo do seu peso.
Retirar o cesto da parte superior da água a ferver. Permitir que o fígado arrefeça à temperatura ambiente.
Depois armazenar o fígado na sua embalagem num local fresco durante pelo menos 3 dias antes de o abrir.
Pode ser congelado após três dias! O foie gras congela melhor cozinhado do que cru!
