Para Navidad, cada vez son más los que preparan su propio foie gras. Ya he sugerido 5 métodos de cocción diferentes y aquí está el sexto que es un poco especial y que estará dirigido a aquellos que tienen el equipo para hacerlo. Pero el resultado es realmente delicioso y el foie gras conserva su olmo natural. No se trata de una receta, sino de un método de cocción.
1 foie gras
sal, pimienta, azúcar
alcohol de elección o no
Prepare su foie gras a su manera. Es importante añadir sal y pimienta.
¡Por todos lados!
Envolver en una capa de film transparente (apto para microondas).
Colóquelo en una bolsa de vacío.
Séllelo al vacío con un tarro de campana o una pequeña máquina de vacío.
¡Y ahí lo tienes!
Si tienes un calentador de inmersión con sonda, calienta el baño a 56,5°C. Una vez alcanzada la temperatura, sumergir el foie gras.
Déjelo durante 50 minutos. Sin aire, los hígados no flotan.
La tapa debe estar bien puesta durante la cocción.
Una vez cocidos los hígados, sumergirlos en un baño de agua helada.
Enfriar durante al menos 3-4 días antes de comer.
La ventaja de este método de cocción es que se mantiene la forma del foie gras.
