Para o Natal, cada vez mais de vós estão a preparar o vosso próprio foie gras. Já sugeri 5 métodos de cozedura diferentes e aqui está o sexto que é um pouco especial e que será dirigido àqueles que têm o equipamento para o fazer. Mas o resultado é realmente delicioso e o foie gras mantém o seu olmo natural. Não é uma receita, mas um método de cozedura.
1 foie gras
sal, pimenta, açúcar
álcool de escolha ou não
Prepare o seu foie gras à sua maneira. É importante adicionar sal e pimenta.
De todos os lados!
Embrulhar numa camada de película aderente (à prova de microondas).
Coloque-o num saco de vácuo.
Selar a vácuo com uma campânula ou pequena máquina de vácuo.
E é tudo!
Se tiver um aquecedor de imersão com sonda, aqueça o banho a 56,5°C. Quando a temperatura é atingida, mergulhar o foie gras.
Deixar entrar durante 50 minutos. Sem ar, os fígados não flutuam.
A tampa deve estar bem colocada durante a cozedura.
Uma vez cozidos os fígados, mergulhá-los num banho de água gelada.
Arrefecer durante pelo menos 3-4 dias antes de comer.
A vantagem deste método de cozedura é que se mantém a forma do foie gras.
