Aquí está el segundo método para cocinar foie gras. Este es realmente muy simple. Aunque sigo prefiriendo la primera versión, esta receta tiene la ventaja de que se hornea sola, sin sudor y sin horno. ¡Y debo admitir que también me gustan estas rebanadas de aspecto artesanal…!
Para esta receta, necesitas foie gras. Para el aliño y para quitar las venas os invito a ir al principio de la receta de terrina de foie gras.
Así que estamos en el punto en que el foie gras está a temperatura ambiente, salado, picante y picante. Puedes elegir la receta que quieras, yo sólo explico aquí el método de cocción.
Por mi parte, en las fotos, hice un foie gras con ron y mezcla de cuatro especias con una buena pizca de azúcar en cada lado.
Basta con colocar el hígado sobre un trozo de film transparente como se muestra en la foto de abajo.
Debe dar 2 vueltas con el rollo de film transparente y luego romperlo para envolverlo bien.
Envolver el foie gras con el film pero esta vez en la otra dirección, siempre con dos vueltas.
Esto se puede hacer 10 veces, 5 veces en una dirección y 5 veces en la otra. El resultado es un «pudín» de hígado.
Ahora sólo hay que hervir 1 litro de agua por cada 100g de hígado. Por ejemplo, si el hígado pesa 500 g, herviré 5 litros de agua. El hígado de la foto pesaba 650g así que herví 6,5l de agua.
Una vez que el agua esté hirviendo, apague el fuego (y retírelo de la placa si está cocinando en una placa eléctrica, ya que permanecen calientes durante mucho tiempo) y sumerja el foie gras en el agua.
La operación más delicada es probablemente sumergir el hígado en agua hirviendo. ¡Todos los medios son buenos para llegar allí!
Ahora el foie gras se deja sumergido por sí solo y simplemente se recupera el foie gras cuando el agua ha bajado a temperatura ambiente. Esto puede llevar tiempo. Limpie bien el foie gras y póngalo en el frigorífico durante al menos 5 días antes de consumirlo.
