Este é o segundo método de cozedura do foie gras. Esta é realmente muito simples. Embora ainda prefira a primeira versão, esta receita tem a vantagem de se cozer sem suor e sem forno! E devo admitir que também gosto destas fatias de aspecto artesanal…!
Para esta receita, é necessário um foie gras. Para o tempero e para remover as veias convido-o a ir ao início da receita de foie gras terrine .
Portanto, estamos no ponto em que o foie gras está à temperatura ambiente, salgado, apimentado e condimentado. Pode escolher a receita que quiser, eu só explico aqui o método de cozedura.
Pela minha parte, nas fotos, fiz um foie gras com rum e quatro misturas de especiarias com uma boa pitada de açúcar em cada lado.
Basta colocar o fígado sobre um pedaço de película aderente, como mostra a fotografia abaixo.
Deve fazer 2 voltas com o rolo de película aderente e depois rasgá-lo para o embrulhar bem.
Envolver o foie gras com o filme, mas desta vez na outra direcção, ainda com duas voltas.
Isto pode ser feito 10 vezes, 5 vezes numa direcção e 5 vezes na outra. O resultado é um “pudim” de fígado.
Agora basta ferver 1 litro de água por 100g de fígado. Por exemplo, se o fígado pesar 500g, ferverei 5 litros de água. O fígado na foto pesava 650g, por isso fervi 6,5l de água.
Quando a água estiver a ferver, desligar o calor (e retirar da placa se estiver a cozinhar numa placa eléctrica, uma vez que ficam quentes durante muito tempo) e mergulhar o foie gras na água.
A operação mais delicada é provavelmente submergir o fígado em água a ferver! Todos os meios são bons para lá chegar!
Agora o foie gras é deixado submerso por si mesmo e o foie gras é simplesmente recuperado quando a água desceu à temperatura ambiente. Isto pode levar tempo. Limpar bem o foie gras e colocá-lo no frigorífico durante pelo menos 5 dias antes de o comer.
