Un delicioso financier con sabor a vainilla y polvo de almendra, cubierto con avellanas tostadas. ¡Un clásico revisitado para nuestro mayor placer! Estos financiers son perfectos para acompañar un sorbete o una ensalada de frutas en .
Receta de financiers de avellana:
-155g de azúcar glas
-100g de polvo de almendra
-25g de harina
-105g de clara de huevo
-1 vaina de vainilla
-150g de mantequilla blanda
-200 g de avellanas peladas
Poner en un bol la almendra en polvo, la harina y el azúcar glas.
Mezclar bien y tamizar si es necesario.
Añadir los 105 g de claras de huevo.
Abrir la vaina de vainilla y raspar el interior con el pulgar.
Añadir la vainillina y mezclar bien.
Poner la mantequilla en un cazo pequeño.
Llevar a ebullición a fuego moderado. La mantequilla hará espuma.
Cuando la mantequilla deje de hacer espuma y empiece a oler a nuez, añádala colándola en la masa.
Mezclar inmediatamente.
Poner las nueces en un papel.
Golpearlas con el fondo de una sartén. Sólo queremos romperlas, no molerlas en polvo.
Poner la masa en los moldes financieros (¡o en otra forma!).
