Acabo de volver de Italia, concretamente de Milán, y he probado este maravilloso plato de espaguetis con limón, atún y guindilla verde con un toque de perejil. Una delicia que no tardé en volver a hacer en casa. El plato se puede preparar en pocos minutos. Un poco de picante del chile verde y mucho limón aportarán color y sabor a tu comida. Se debe hacer inmediatamente…
Receta para 4 personas:
400 g de espaguetis
1 cebolla
1 chile verde grande
1 o 2 dientes de ajo
De 4 a 6 cucharadas de aceite de oliva
1 o 2 limones sin tratar
250g de atún en salmuera
1 manojo de perejil plano
sal
Cocine los espaguetis durante 1 minuto menos de lo indicado en el paquete. Guardar el agua de cocción de la pasta.
Escurrir y enjuagar en agua fría para evitar que se cocinen. No olvides guardar el agua de cocción…
Para la guindilla verde, coge una grande. Las grandes suelen picar menos que las pequeñas.
Picar finamente la cebolla con el diente o dientes de ajo.
Hacer lo mismo con la guindilla (con las semillas).
En las fotos, hice una cuarta parte de la receta porque estaba sola. Había puesto un cuarto de cebolla y un cuarto de guindilla… Así que tendrás más en la vida real…
Calentar el aceite de oliva en la sartén a fuego moderado y añadir la cebolla/ajo y la guindilla. Para la guindilla, puedes añadirla poco a poco.
Rallar finamente la cáscara de limón.
¡Te garantizo que huele muy bien en esta época!
Cocinar durante 2-3 minutos y luego añadir el atún en trozos.
Vierta parte del agua de cocción de la pasta. Debería haber unos 5 mm de jugo en el fondo.
Picar finamente el perejil de hoja plana.
Poner un poco en el caldo. Probar y añadir sal si es necesario.
Añade la pasta.
Caliéntalos en el jugo hirviendo. También puedes añadir un poco de cáscara de limón.
Calentar durante 1 minuto sin dejar de remover. Debería quedar algo de jugo en el fondo.
Servir en 4 platos y añadir un poco de perejil, ralladura de limón y servir inmediatamente.
