Acabo de regressar de Itália, de Milão, para ser mais preciso, e provei este maravilhoso prato de esparguete com limão, atum e malagueta verde com um toque de salsa. Uma delícia que me fez voltar rapidamente a fazer em casa. O prato pode ser preparado em poucos minutos. Um pouco de especiarias da malagueta verde e muito limão trarão cor e sabor à sua refeição! A ser feito imediatamente…
Receita para 4 pessoas:
400g de esparguete
1 cebola
1 malagueta verde grande
1 ou 2 dentes de alho
4 a 6 colheres de sopa de azeite
1 ou 2 limões não tratados
250g de atum em salmoura
1 ramo de salsa plana
sal
Cozinhe o seu esparguete durante menos 1 minuto do que o indicado no pacote. Guardar a água de cozedura da massa.
Drenar e enxaguar em água fria para os impedir de cozinhar. Não se esqueça de poupar a água de cozedura…
Para a malagueta verde, tome uma grande. Os grandes geralmente picam menos que os pequenos.
Picar finamente a cebola com o(s) dente(s) de alho.
Fazer o mesmo para as pimentas (com as sementes).
Nas fotos, fiz um quarto da receita porque estava sozinho. Tinha posto um quarto de uma cebola e um quarto de uma pimenta. Por isso, vai receber mais na vida real…
Aquecer o azeite na frigideira em lume moderado e adicionar a cebola/garlic e a malagueta. Para a malagueta, pode adicioná-la gradualmente.
Raspar finamente a casca de limão.
Garanto-vos que cheira tão bem neste momento!
Cozinhar durante 2-3 minutos e depois adicionar o atum em pedaços.
Verter água de cozedura da massa. Deve haver cerca de 5mm de sumo no fundo.
Cortar finamente a salsa de folha plana.
Colocar uma parte no caldo. Provar e adicionar sal, se necessário.
Acrescentar a massa.
Aqueça-os no sumo a ferver. Também se pode acrescentar um pouco de casca de limão.
Aquecer durante 1 minuto enquanto se mexe. Deve sobrar algum sumo no fundo.
Sirva em 4 pratos e adicione um pouco de salsa, raspa de limão e sirva imediatamente!
