Acabo de terminar de escribir mi cuarto libro (que sale en octubre de 2017) y por curioso que parezca, ¡mi recreación es una receta para el blog! Muchos de vosotros estáis de vacaciones y he pensado en vosotros con esta original receta de ensalada fría de pasta asiática con verduras que será perfecta para un picnic o una colorida comida de verano. Pongo verduras crudas: zanahorias, pimientos, brotes de judías mungo, tomate y verduras cocidas rápidamente, como edamame y judías planas. Con una deliciosa salsa de aceite de oliva y crema de sésamo, aderezada con un toque de miel y vinagre balsámico, ¡esta pasta fresca le encantará!

Para 6 personas :
400 g de fideos chinos cocidos y escurridos
1/2 pimiento rojo
1/2 pimiento amarillo
1 tomate grande
250 g de brotes de judías mungo (también conocidos como brotes de soja)
1 manojo pequeño de cebollino
1 manojo pequeño de cilantro
2 cucharadas de cebollas fritas
2 zanahorias
125 g de judías planas
2 cucharadas de aceite de oliva
250 g de edamame o guisantes
Para la salsa:
1 cucharadita de miel
1 cucharada de vinagre balsámico
4 cucharadas de aceite de oliva
1 cucharadita de aceite de sésamo tostado
2 cucharadas de crema de sésamo
1 diente de ajo
sal pimienta
Cocer los fideos chinos como se indica en el paquete y enfriarlos en agua fría. Escúrralos bien y póngalos en un recipiente grande.
En esta receta, ¡quiero color!
Sólo necesitarás medio pimiento amarillo y medio pimiento rojo. Puedes poner sólo uno o el otro. Retirar las semillas y cortar en rodajas muy finas.
Sube a la pasta fría.
Cortar el tomate en trozos. Aquí tomé un tomate grande, verde y maduro.
Ponerlo en la pasta con los brotes de judías mungo.
Picar finamente el cebollino.
Verter las cebollas fritas.
Cortar las judías planas por la mitad. Sólo ellos y el edamame se cocinarán.
Ponerlas en un wok con dos cucharadas de aceite de oliva y saltearlas a fuego fuerte durante 5 minutos.
Cocer el edamame (o los guisantes, ¡los guisantes de la huerta Picard son estupendos!) durante 9 minutos en agua hirviendo con sal.
Aclarar con agua fría para detener el proceso de cocción y enfriarlas completamente. Escurrirlas bien y ponerlas en la ensalada con las judías planas cocidas.
Pelar las zanahorias.
Y rállalos. ¡Tengo un utensilio mágico que me permite prescindir de un robot para este paso!
Picar finamente el cilantro y verter todo en el recipiente.
En un recipiente pequeño, pon la miel, el vinagre balsámico, el diente de ajo pelado y picado (¡para eso tengo mi prensa de ajos!), el aceite de oliva y el aceite de sésamo tostado.
Salpimentar generosamente y añadir la crema de sésamo (tahini).
Mezclar bien, ¡la salsa está lista!
Verter en la pasta y mezclar bien para dispersar todos los elementos.
Enfriar durante al menos dos horas antes de servirlo frío en una bonita mesa de verano.
