Acabo de escrever o meu 4º livro (que sai em Outubro de 2017) e, por curioso que pareça, a minha recriação é uma receita para o blogue! Muitos de vós estão de férias e pensei em vós com esta receita original para uma salada de massa fria asiática com legumes que será perfeita para um piquenique ou uma refeição colorida de Verão. Coloco vegetais crus: cenouras, pimentos, rebentos de feijão mungo, tomate e vegetais rapidamente cozidos, tais como edamame e feijão plano. Com um delicioso azeite e molho de creme de sésamo, temperado com uma pitada de mel e vinagre balsâmico, esta massa fresca vai deliciar-vos!

Para 6 pessoas:
400g de macarrão chinês cozinhado e drenado
1/2 pimento vermelho
1/2 pimenta amarela
1 tomate grande
250g de rebentos de feijão mungo (também conhecidos como rebentos de soja)
1 pequeno grupo de cebolinho
1 pequeno grupo de coentros
2 colheres de sopa de cebola frita
2 cenouras
125g feijão plano
2 colheres de sopa de azeite de oliva
250g de edamame ou ervilhas
Para o molho:
1 colher de chá de mel
1 colher de sopa de vinagre balsâmico
4 colheres de sopa de azeite de oliva
1 colher de chá de óleo de gergelim tostado
2 colheres de sopa de creme de sésamo
1 dente de alho
sal, pimenta
Cozinhe o seu macarrão chinês como indicado no pacote e arrefeça-o em água fria. Esvazie-os cuidadosamente e coloque-os num grande recipiente.
Nesta receita, eu quero cor!
Só precisará de meia pimenta amarela e meia pimenta vermelha. Só se pode colocar um ou outro. Retirar as sementes e cortar em fatias muito finas.
Saltar para dentro da massa fria.
Cortar o tomate em pedaços. Aqui tomei um tomate grande, verde e maduro.
Colocá-lo na massa com os rebentos de feijão mungo.
Cortar finamente o cebolinho.
Verter as cebolas fritas.
Cortar os feijões planos ao meio. Só eles e o edamame cozinharão.
Colocá-los num wok com duas colheres de sopa de azeite e fritar em lume forte durante 5 minutos.
Cozinhar o edamame (ou ervilhas, as ervilhas Picard garden são óptimas!) durante 9 minutos em água com sal a ferver.
Enxaguar com água fria para parar o processo de cozedura e arrefecê-los completamente. Escorra-os bem e coloque-os na salada com os feijões planos cozidos.
Descascar as cenouras.
E ralá-los. Tenho um utensílio mágico que me permite passar sem um robô para este passo!
Cortar finamente os coentros e despejar tudo no recipiente.
Num pequeno recipiente, colocar o mel, vinagre balsâmico, dente de alho descascado e picado (tenho o meu lagar de alho para isso!), azeite e óleo de sésamo tostado.
Temperar generosamente com sal e pimenta, depois adicionar o creme de gergelim (tahini).
Misture bem, o molho está pronto!
Verter para a massa e misturar bem para dispersar todos os elementos.
Relaxe durante pelo menos duas horas antes de servir frio numa boa mesa de Verão!
