Nada como mi ensalada de quinoa con frutos secos, esta ensalada muy fresca es perfecta para los días de calor. Un poco de bulgur, mucha quinoa, pimiento verde, zanahoria crujiente, hierbas frescas y unos pocos arándanos para dar color y un toque de dulzura, ¡pondrás un poco de sol en tu plato! En casa, casi me termino el bol yo sola, no pude contenerme…
Receta de ensalada de quinoa fresca para 6 personas:
100 g de bulgur fino
300g de quinoa
4 cucharadas de aceite
1 cucharadita de miel
1 zanahoria
1 tomate
1 pimiento verde
1/2 chalota
100 g de arándanos rojos
1 manojo pequeño de cebollino
1/2 manojo de cilantro
sal
Este es el bulgur fino.
Verter 200 ml de agua hirviendo y dejar reposar.
Cocer la quinoa en una olla grande de agua hirviendo con sal durante 14 minutos (comenzando en cuanto se vierte la quinoa en el agua hirviendo).
Después de la cocción, pasar la quinoa a un colador fino y enjuagarla con agua fría para que se enfríe completamente.
Poner la quinoa bien escurrida con el bulgur en un recipiente grande.
Añadir el aceite de oliva y la miel.
Vierta los arándanos.
Las verduras tendrán que ser picadas finamente. Puedes cortarlas más gruesas, pero eso es lo que hace que la ensalada sea bonita y con muchos elementos por todas partes.
Comience por cortar el pimiento sin semillas.
A continuación, cortar las rodajas en cubos pequeños.
Lo mismo ocurre con los tomates.
Y la zanahoria.
No olvides la chalota.
Picar finamente el cebollino y el cilantro.
Salar la ensalada al gusto y dejarla en la nevera al menos 4 horas antes de disfrutarla al sol.
Verás que rápidamente se vuelve adictivo… Guárdelo en una caja hermética.
