Nada como a minha salada de quinoa de frutos secos, esta salada muito fresca é perfeita para dias quentes. Um pouco de bulgur, muita quinoa, pimenta verde, cenoura crocante, ervas frescas e algumas arandos para colorir e um toque de doçura, vai pôr um pouco de sol no seu prato! Em casa, quase terminei a tigela sozinho, não consegui parar…
Receita de salada de quinoa fresca para 6 pessoas:
100g de bulgur fino
300g de quinoa
4 colheres de sopa de óleo
1 colher de chá de mel
1 cenoura
1 tomate
1 pimenta verde
1/2 chalota
100g de arandos
1 pequeno grupo de cebolinho
1/2 ramo de coentros
sal
Este é o belo bulgur.
Verter 200ml de água a ferver sobre ela e deixar repousar.
Cozinhar a quinoa numa grande panela de água com sal a ferver durante 14 minutos (começando assim que deitar a quinoa na água a ferver).
Após cozinhar, transferir a quinoa para uma peneira fina e lavá-la com água fria para a arrefecer completamente.
Colocar a quinoa bem drenada com o bulgur num grande recipiente.
Acrescentar o azeite e o mel.
Despejar os arandos.
Os legumes terão de ser finamente cortados. Pode cortá-los mais grossos, mas é isso que faz uma bela salada com muitos elementos em todo o lado!
Comece por cortar a pimenta semeada.
Em seguida, cortar as fatias em cubos pequenos.
O mesmo se aplica aos tomates.
E a cenoura.
Não se esqueça da chalota.
Picar finamente o cebolinho e os coentros.
Salgue a salada a gosto e deixe-a no frigorífico durante pelo menos 4 horas antes de a apreciar ao sol!
Verá que rapidamente se torna viciante… Guarde-o numa caixa hermética.
