En primer lugar: ¡no, esto no es un helado! Pero esta ensalada de patatas se sirve con una bola de helado en Japón. Quién sabe por qué.
Esta es una ensalada de patatas muy sencilla. Se puede encontrar en todo Japón (vea el viaje culinario de Tokio haciendo clic AQUÍ). A menudo se sirve con una bola de helado para darle un aspecto aún más «kawai». Sin embargo, si se observa con detenimiento, esta receta también se encuentra en otros países. Pero lo que marca la mínima diferencia es la salsa utilizada. Puede comprarlo en una tienda de comestibles japonesa o prepararlo usted mismo con un poco de vinagre de arroz. ¡Consigue tus palillos!
Receta de ensalada de patatas:
-6 patatas -1 zanahoria -350g de mayonesa japonesa «kwepie» o casera
Mayonesa japonesa: -1 yema de huevo -1/2 cucharadita de azúcar -2 cucharadas de vinagre de arroz -350g de aceite
Cocer las patatas al vapor. Todo depende de su tamaño, así que basta con clavar un tenedor para ver si están cocidos.
La zanahoria puede dejarse cruda o cocerse al vapor durante unos diez minutos. No estará cocida, sino apenas tierna.
Se trata de la mayonesa japonesa que es muy famosa allí: la mayonesa «kwepie». La compré porque esta receta se hace casi siempre con esta mayonesa en particular en Japón. Se puede encontrar en los supermercados japonés, como en la calle Sainte Anne de París, o en Internet. Cuando lo probé, no entendí muy bien por qué tenía tanto éxito. Tal vez esto se deba al hecho de que contiene vinagre de arroz. ¡No lo sé, pero creo que es fácilmente reemplazable por cualquier mayonesa industrial…! Doy una opinión muy honesta y objetiva.
Se puede hacer una mayonesa similar poniendo en un vaso medidor vinagre arroz, yema de huevo y azúcar.
A continuación, añadir el aceite y mezclar con una batidora de mano. No es el mismo método que el de nuestra buena mayonesa francesa, pero al menos se puede ceñir lo más posible a la «kwepie» japonesa.
Cuando las patatas estén cocidas, dejarlas enfriar. Pelarlas y cortarlas en trozos grandes.
Triturar con un tenedor y mayonesa. Es aún mejor cuando quedan trozos.
Cortar la zanahoria en rodajas finas y luego en trozos pequeños.
Mezclar todo y dejar en la nevera al menos 3 horas antes de servir.
En Japón, esta ensalada se sirve con… ¡una bola de helado! Se hacen bolas y se comen con ensalada verde… ¿Y por qué no con brochetas de dumplings de pollo yakitori?
