Primeiro que tudo: não, isto não é um gelado! Mas esta salada de batata é servida com uma colher de gelado no Japão! Quem sabe porquê!
Esta é uma salada de batata muito simples. Pode ser encontrado em todo o Japão (ver a viagem culinária de Tóquio, clicando AQUI). Muitas vezes servido com uma colher de gelado para um olhar ainda mais “kawai”! No entanto, numa inspecção mais atenta, esta receita também se encontra noutros países. Mas o que faz a mais pequena diferença é o molho utilizado. Pode comprá-la numa mercearia japonesa, ou fazê-la você mesmo com um pouco de vinagre de arroz. Peguem nos vossos pauzinhos!
Receita para salada de batata:
-6 batatas -1 cenoura -350g de maionese japonesa “kwepie” ou caseira
maionese japonesa: -1 gema de ovo -1/2 colher de chá de açúcar -2 colheres de sopa de vinagre de arroz -350g de óleo
Vaporizar as batatas. Tudo depende do seu tamanho, por isso basta espetar um garfo para ver se estão cozinhados.
A cenoura pode ser deixada crua ou cozida a vapor durante cerca de dez minutos. Não será cozinhado, mas apenas tenro.
Aqui está a maionese japonesa que é muito famosa ali: a maionese “kwepie”. Comprei-a porque esta receita é quase sempre feita com esta maionese em particular no Japão. Pode ser encontrado em supermercados japonês, como na rue Sainte Anne em Paris, ou na Internet. Quando o provei, não percebi bem porque tinha tanto sucesso. Talvez isto se deva ao facto de conter vinagre de arroz. Não sei, mas penso que é facilmente substituível por qualquer maionese industrial…! Dou uma opinião muito honesta e objectiva.
Uma maionese semelhante pode ser feita colocando vinagre arroz, gema e açúcar num copo doseador.
Em seguida, adicionar o óleo e misturar com uma varinha mágica. Não é o mesmo método que a nossa boa e velha maionese francesa, mas pelo menos pode ficar o mais próximo possível do “kwepie” japonês.
Quando as batatas estiverem cozinhadas, deixe-as arrefecer. Descasca-os e corta-os em grandes pedaços.
Triturar grosseiramente com um garfo e uma maionese. É ainda melhor quando ainda há peças.
Cortar a cenoura em fatias finas, depois em pequenos pedaços.
Misturar tudo e deixar no frigorífico durante pelo menos 3 horas antes de servir.
No Japão, esta salada é servida com…uma colher de gelado! São feitos em bolas e comidos com salada verde. E porque não com espetos de dumplings de galinha yakitori?
