Acabo de regresar de un viaje y me he traído varias ideas de recetas en la maleta. ¡Estuve en Seattle por tercera vez en mi vida y sólo ahora estoy descubriendo los bebés holandeses! Es una especie de panqueque grueso, cocinado primero en una sartén y luego en el horno. Fui al Tilikum Place Café de Seattle, conocido por servir el mejor Dutch Baby. Aquí tenemos una versión con arándanos y ricotta al limón. La masa no lleva azúcar, así que tendrás que endulzarla al final con un poco de azúcar glas, pero sobre todo rociar con sirope de arce. Una auténtica delicia. El nombre proviene probablemente de la deformación de«deutsch«, que significa alemán en alemán, y se pronuncia casi igual que dutch, que significa holandés. Pero lo más probable es que su origen esté en las tortitas alemanas, las pfannkuchen . También puedes pensar en el Far Breton (mi receta AQUÍ), ¡pero prefiero mantener las cosas separadas!
Receta para 2 o 3 dutch babies de 16 cm:
2 huevos
360 g de leche semidesnatada
165 g de harina
150 g de queso ricotta
1 limón sin tratar
45g de mantequilla semi-salada
150 g de arándanos o a su gusto
jarabe de arce y azúcar glas para servir
Las instrucciones
Para esta receta, hay que colgar sartenes resistentes al horno, así que nada de asas de madera. Me quedé con la versión que probé en Seattle y compré la marca Lodge. Hay que tener cuidado porque son de hierro fundido y hay que secarlas bien y aceitarlas por dentro para evitar que se oxiden después de cada uso. He leído críticas de esta marca y de estas sartenes, pero la gente no las ha utilizado bien. Tengo muchas estufas de hierro fundido de Skeppshult y es el mismo problema, requiere mantenimiento. E incluso si se oxida, siempre se puede recuperar volviendo a revestir. Al hacerlo, los conservará de por vida. Pagué 11,50 dólares por estas pequeñas sartenes de 16 cm en el acto. Pero también puede encontrarlos en Internet. Y puedes elegir cualquier tamaño, sólo tienes que poner más ingredientes.
Mezclar la ricotta con la ralladura de un cuarto de limón, ¡o más si se quiere!
Para la masa, mezclar los huevos con un poco de leche y luego la harina para evitar los grumos.
Es como hacer masa para panqueques. Terminar añadiendo el resto de la leche. La masa está lista.
Verter un poco de mantequilla semi-salada por sartén (aproximadamente 15g) en la sartén a fuego moderado.
Cuando esté bien derretido y empiece a crujir, verter un poco de la masa hasta menos de la mitad de la altura.
Dejar que se chamusque en el fondo y luego añadir dos o tres cucharadas de ricotta al limón.
Transfiera los moldes a una bandeja para hornear y añada los arándanos a los moldes.
Cocer en el horno a 200°C durante 20 a 25 minutos, sin dejar de vigilarlos.
Los bebés holandeses se hincharán y volverán a caer después de la cocción.
Espolvorear con azúcar glas, luego rociar con sirope de arce al gusto y ¡disfrutar mientras está caliente!
