Se parecen a las florentinas, pero son más crujientes y sólo contienen almendras laminadas. Una fina capa de chocolate subraya el conjunto. Un pequeño pastel (o más bien una delicia, ¡ya que no lleva huevo ni harina!) que será perfecto para el té o el café.
Receta de patatas fritas de chocolate con almendras:
-250 g de almendras fileteadas -50g mantequilla sin sal -35g de mantequilla salada -200g de nata líquida -100g de azúcar -100g de miel
Precalentar el horno a 180°C. Poner en un cazo el azúcar, la miel, las mantequillas y la nata.
Calentar a fuego moderado y dejar hervir.
El caramelo debe ser bastante ligero porque luego se volverá a cocer en el horno.
Añadir las almendras fileteadas y mezclar bien.
Colocar en moldes de silicona.
Presionar bien con el dorso de una cuchara.
Introducir en el horno a 200°C y cocer de 5 a 8 minutos (¡varía según el caramelo obtenido y la potencia del horno!).
Sacar y enfriar sobre una rejilla.
Templar la tapa elegida (ver método aquí). Yo utilizo el método de la manteca de cacao mycryo, que es más práctico cuando no se tiene una máquina de inmersión o una mesa de mármol.
Cuando el chocolate esté templado, verter una cucharadita en el molde de la florentina.
A continuación, coloque un crujiente con delicadeza sobre el chocolate para que se extienda justo por debajo de la superficie.
Deje que cristalice completamente y luego desmolde.
Ya está listo, sólo queda sacar una baraja de cartas y un buen café.
