Parecem florentinas, mas são mais estaladiças e contêm apenas amêndoas em flocos. Uma fina camada de chocolate sublinha o todo! Um pequeno bolo (ou melhor, um doce, pois não há ovo nem farinha!) que será perfeito para chá ou café.
Receita de batatas fritas de amêndoa de chocolate:
-250g de amêndoas fendidas -50g de manteiga mole -35g de manteiga com sal -200g de creme completo -100g de açúcar -100g de mel
Pré-aquecer o forno a 180°C. Colocar o açúcar, mel, manteigas e natas numa caçarola.
Aquecer com calor moderado e deixar ferver.
O caramelo deve ser bastante leve porque depois cozerá novamente no forno!
Acrescentar as amêndoas fendidas e misturar bem.
Colocar em moldes de silicone.
Pressionar bem com a parte de trás de uma colher.
Colocar no forno a 200°C e cozinhar durante 5 a 8 minutos (isto varia de acordo com o caramelo obtido e a potência do forno!).
Sair e arrefecer num suporte de arame.
Temperar a capa escolhida (ver método aqui). Eu uso o método da manteiga de cacau mycryo, que é mais prático quando não se tem uma máquina de imersão ou uma mesa de mármore!
Quando o chocolate estiver temperado, deitar uma colher de chá cheia no molde florentino.
Em seguida, colocar delicadamente um estaladiço em cima do chocolate para que este se espalhe logo abaixo da superfície.
Deixem cristalizar completamente e depois desmoldar!
Está pronto, só falta tirar um baralho de cartas e um bom café!
