En la cena organizada por Lagostina, disfrutamos de unas deliciosas tostadas con aceite de oliva como aperitivo (entre otras cosas). Todo el mundo lo encontró delicioso y especialmente original. Fui a ver a nuestra cocinera para esa noche, Olympe, de Casa Olympe, y le pedí su receta que amablemente me dio. ¿De qué se trata? Dos rebanadas de pan doradas en aceite de oliva, cubiertas con cebollas cocidas, anchoas y queso pecorino. ¡El conjunto es fundente, crujiente y particularmente sabroso! Así que decidí rendirle un homenaje al Olimpo y tengo que decir que creo que la mordida del Olimpo tiene un nombre muy acertado. La «Croque-Olympe» puede servirse en cuartos como aperitivo.
Receta de «Croque-Olympe» para 4 personas:
-8 rebanadas grandes de pan -3 cebollas -12 filetes de anchoa -100g de queso pecorino -Mantequilla salada -Aceite de oliva
Si no encuentras anchoas marinadas en aceite de oliva, puedes ponerlas por la mañana para que se marinen en él.
Cortar las cebollas en cubos.
Caliente el aceite de oliva en una sartén grande o en un wok.
Cocinar las cebollas a fuego moderado.
Añadir un poco de agua para cocer las cebollas.
Las cebollas están listas cuando están transparentes.
Cortar los filetes de anchoa en trozos pequeños.
Retirar la corteza de las rebanadas de pan.
Unte con mantequilla un lado de una rebanada por croque-Olympe.
Adornar con cebolla en aceite de oliva la rebanada untada con mantequilla (mantequilla justo debajo de la cebolla, dentro de la croque-Olympe).
Añadir los filetes de anchoa cortados en trozos.
Picar finamente el pecorino. Con una maquinilla de afeitar de trufa, ¡es aún más fácil!
Añadir el pecorino.
Luego, cierra con una rodaja. Haz lo mismo con todos los hombres del saco del Olimpo.
Calentar un poco de aceite de oliva en una sartén y añadir la croque-Olympe.
Cuando la croque-Olympe esté dorada, retírala, añade un poco de aceite de oliva y vuelve a ponerla por el otro lado.
Cortar cada olímpico en 4 trozos.
Y disfrútelo cuando esté caliente con una copa de Prosecco.
