Durante una de mis clases de cocina casera, Valerie, una de las alumnas, me invitó muy amablemente a almorzar con ellas antes de que hiciéramos juntos los macarrones. Al final de la comida, nos trajo cremas de chocolate. En el momento en que sumergí la cuchara en la olla, supe que iba a necesitar esta receta. En efecto, la crema es firme en su justa medida y se derrite en la boca, con un rico y tranquilizador sabor a chocolate horneado en . Esta receta es absolutamente divina y todo está en las proporciones, además, te llevará menos de 5 minutos prepararla (¡luego tienes que dejarla enfriar!). Vuelvo a dar las gracias a Valerie por compartir con nosotros esta fabulosa, rica y cremosa crema de chocolate.
Receta para 5 ramequines: (¡es rica pero tan buena!)
-750g de crema completa
-200g de chocolate negro al 56% (chocolate de repostería nestlé en papel craft)
-50g de chocolate negro al 70%
Poner la nata en un cazo y calentarla a fuego lento.
Llevar a ebullición.
Pesar el chocolate. He utilizado 250g del mismo chocolate, Valrhona manjari.
Poner el chocolate en la crema hirviendo.
Remover constantemente a fuego lento hasta que el chocolate esté completamente derretido (de 1 a 2 minutos).
La crema sigue hirviendo, pero el chocolate debe derretirse bien.
Cuando todo esté derretido, viértalo en los ramequines.
Deje que se enfríe por completo a temperatura ambiente y, a continuación, póngalo en el frigorífico durante al menos 3 horas.
