Durante uma das minhas aulas de cozinha em casa, Valerie, uma das alunas, convidou-me muito gentilmente para almoçar com elas antes de fazermos macaroons juntos. No final da refeição, ela trouxe-nos cremes de chocolate. No momento em que mergulhei a colher na panela, soube que ia precisar desta receita. De facto, o creme é firme e derrete na boca, com um sabor rico e tranquilizador de chocolate cozido. Esta receita é absolutamente divinal e está tudo nas proporções, além disso, demorará menos de 5 minutos a preparar-se (depois tem de deixar arrefecer!). Agradeço novamente à Valerie por partilhar connosco este fabuloso, rico e cremoso creme de chocolate.
Receita para 5 ramequins: (é rico mas tão bom!!!)
-750g de creme completo
-200g de 56% de chocolate preto (chocolate pasteleiro nestlé em papel artesanal)
-50g de chocolate preto 70%
Colocar o creme numa caçarola e aquecer em lume brando.
Levar à ebulição.
Pesar o chocolate. Usei 250g do mesmo chocolate, Valrhona manjari.
Colocar o chocolate no creme a ferver.
Mexer constantemente em lume brando até o chocolate estar completamente derretido (1 a 2 minutos).
O creme continua a ferver, mas o chocolate deve derreter bem.
Quando tudo estiver derretido, verter para os ramequins.
Deixar arrefecer completamente à temperatura ambiente, depois reservar no frigorífico durante pelo menos 3 horas.
