En realidad, las costillas cantonesas se cuecen durante casi una hora y luego se caramelizan a fuego más fuerte al final. ¡Son muy sencillos de hacer y realmente deliciosos! A pesar de que esta receta es orignaria de Cantón (Guangzhou), ¡la aprendí en Pekín!
Receta de costillas caramelizadas para 4 personas:
-500g de costillas
-1 cucharada de aceite
1-2 centímetros de jengibre fresco en trozos pequeños
-1 cucharada de salsa de soja oscura
-2 cucharadas de salsa de soja clara
-2 cucharadas de azúcar en polvo
-1 cucharada de vino chino de al menos 30º de alcohol
-200ml de agua
Poner una cucharada de aceite en el wok a fuego bastante alto. Añadir el jengibre en trozos pequeños.
Añadir las costillas de cerdo en trozos y mezclar bien a fuego bastante alto.
Añadir los 200 ml de agua y el azúcar.
Luego las salsas de soja, claras y oscuras.
Tapar parcialmente y bajar el fuego. Dejar cocer así durante casi una hora o hasta que el nivel de agua haya bajado.
Al final de la cocción, subir el fuego y remover bien para que los jugos de la cocción se espesen y desaparezcan casi por completo para cubrir todos los trozos de cerdo.
Servir inmediatamente con fideos fritos o arroz. Así, el cerdo se derrite y la carne se desprende del hueso con mucha facilidad.
