As costelas cantonesas são, de facto, brazadas durante quase uma hora e depois caramelizadas com um calor mais elevado no final. São muito simples de fazer e realmente deliciosos! Apesar de esta receita ser orignary of Canton (Guangzhou), aprendi-a em Pequim!
Receita de costelas caramelizadas para 4 pessoas:
-500g de costelas
-1 colher de sopa de óleo
1-2 centimetros de gengibre fresco em pequenos pedaços
-1 colher de sopa de molho de soja escuro
-2 colheres de sopa de molho de soja transparente
-2 colheres de sopa de açúcar pilão
-1 colher de sopa de vinho chinês com pelo menos 30° de álcool
-200ml de água
Colocar uma colher de sopa de óleo no wok em lume relativamente alto. Acrescentar o gengibre em pequenos pedaços.
Juntar as costelas de porco em pedaços e misturar bem em lume bastante forte.
Adicionar os 200ml de água e o açúcar.
Depois os molhos de soja, claros e escuros.
Cobrir parcialmente e baixar o calor. Deixar cozinhar desta forma durante quase uma hora ou até que o nível da água tenha descido.
No final do tempo de cozedura, aumentar o calor e mexer bem para que os sucos de cozinha engrossem e desapareçam quase completamente para revestir todos os pedaços de carne de porco.
Servir imediatamente com macarrão frito ou arroz! A carne de porco é então derretida e a carne sai do osso muito facilmente!
