Hace algún tiempo, a Traou Mad le gustó mi pequeño reportaje sobre su fábrica de Pont Aven (ver el reportaje AQUÍ). Desde entonces me han pedido que haga algunas recetas para su blog: http://blog.traoumad.fr/. ¡Así que tuve el placer de recibir un paquete lleno de maravillas en casa! La primera receta que me pidieron fue sobre el tema de San Valentín. Hoy os ofrezco mi receta en la que he evitado escrupulosamente el chocolate (el corazón ya es demasiado «tópico», así que con el chocolate, ¡se me hizo demasiado!) Se trata de una base de traou mad horneada con una panacota de pistacho, coronada con frambuesas. Para la foto he utilizado frambuesas frescas, así que antes de que me gritéis al oído que no es temporada, os recuerdo que las hay congeladas. ¡Feliz Día de San Valentín a los enamorados!
Una nota rápida sobre las proporciones: hice esta receta en un corazón bastante pequeño. Se puede hacer en un círculo de 18 cm. Pero puede quedar algo de panacota. ¡Sólo hay que ponerlo en un tarro pequeño!
Receta de la tarta de frambuesas de Traou Mad Pistachio (para un círculo de 18 cm):
Poner la masa en el fondo de un círculo untado con mantequilla o cualquier otra forma de su elección, con el círculo en una bandeja de horno forrada con papel de hornear(este no es el caso en la foto). A grandes rasgos, se necesita menos de un centímetro de masa.
Aplastar con el dorso de una cuchara.
Introducir en el horno durante 10-15 minutos a 170°C, sin dejar de vigilarlos. La masa volverá a estar crujiente y la mantequilla se escurrirá por los lados. Todo lo que queda es el crujiente traou mad después de enfriar.
Preparar la panacota de pistacho. Poner el azúcar y la pasta de pistacho en un cazo.
Añadir un poco de nata y mezclar bien para disolver la pasta de pistacho.
Poner a fuego lento y llevar a ebullición suavemente. Mientras tanto, remojar las hojas de gelatina en agua fría.
Cuando la nata esté hirviendo, añadir las hojas de gelatina (1+1/2) remojadas y escurridas una a una y mezclar bien.
Verter la panacota sobre la masa enfriada.
Dejar enfriar al menos 4 horas (o mejor aún, toda la noche).
Al día siguiente, calienta todo el borde exterior con un secador de pelo.
Levante suavemente el círculo.
Decorar con frambuesas frescas o congeladas.
Por último, espolvorear con azúcar glas. Espolvorear la parte superior con algunos pasteles Pont-Aven rotos y un poco de pasta de pistacho (si es «casera», ya que la comercial es más líquida).
