Há algum tempo atrás, Traou Mad gostou do meu pequeno relatório sobre a sua fábrica em Pont Avenue (ver o relatório AQUI). Desde então, pediram-me para fazer algumas receitas para o seu blogue: http://blog.traoumad.fr/. Por isso tive o prazer de receber um pacote cheio de maravilhas em casa! A primeira receita que me pediram foi para ser sobre o tema do Dia dos Namorados. Hoje ofereço-vos a minha receita onde evitei escrupulosamente o chocolate (o coração já é demasiado “cliché”, por isso, com o chocolate, tornou-se um pouco demais!) Esta é uma base de traou louco cozida com uma panacotta de pistache, coberta com framboesas. Para a foto utilizei framboesas frescas, por isso antes que grites ao meu ouvido que não é a época, lembro-te que há framboesas congeladas! Feliz dia de São Valentim para os amantes!
Uma nota rápida sobre as proporções: fiz esta receita num coração bastante pequeno. Pode ser feito num círculo de 18cm. Mas pode sobrar algum panacotta. Basta colocá-lo num pequeno frasco!
Receita para o Bolo de Framboesa Traou Mad Pistachio (para um círculo de 18cm):
Coloque a massa no fundo de um círculo com manteiga ou qualquer outra forma à sua escolha, com o círculo sobre uma folha de cozedura forrada com papel vegetal(não é o caso na foto)! Grosseiramente falando, é preciso menos de um centímetro de massa.
Esmagar com a parte de trás de uma colher.
Colocar no forno durante 10-15 minutos a 170°C, mantendo-os debaixo de olho. A massa voltará a ficar estaladiça e a manteiga sairá dos lados. Tudo o que resta é o traou louco estaladiço após o arrefecimento.
Preparar o panacotta de pistachio. Colocar a pasta de açúcar e pistachio numa caçarola.
Adicionar um pouco de creme e misturar bem para dissolver a pasta de pistachio.
Colocar em lume brando e deixar ferver suavemente. Entretanto, mergulhar as folhas de gelatina em água fria.
Quando o creme estiver a ferver, adicionar as folhas de gelatina embebidas e espremidas (1+1/2) uma a uma e misturar bem.
Verter o panacotta sobre a massa refrigerada.
Deixar arrefecer durante pelo menos 4 horas (ou melhor ainda, durante a noite).
No dia seguinte, aquecer toda a borda exterior com um secador de cabelo.
Levantar gentilmente o círculo.
Decorar com framboesas frescas ou congeladas.
Finalmente, polvilhar com açúcar de confeiteiro. Polvilhar o topo com alguns bolos de Pont-Aven partidos e um pouco de pasta de pistache (se for “caseiro”, pois o comercial é mais líquido!).
