Llevo mucho tiempo queriendo cocinar conejo en mi blog de cocina. ¡Se hace con este conejo con ciruelas pasas en una salsa ultra sabrosa y cremosa! Me trae recuerdos de mi infancia. ¡Hace años que no lo como! Pero este plato sigue siendo delicioso. Con unas cuantas patatas al vapor, ni siquiera sentirás que te estás pasando. Bueno, ¡casi!
Receta de conejo con ciruelas para 6 personas:
-50g de mantequilla -2 cucharadas de aceite de oliva -1,5 kg de conejo (silla de montar, pierna de cordero, etc.) -300g de tocino ahumado -1 cebolla -3 dientes de ajo -1 cucharada grande de harina -350ml de vino blanco seco -500 ml de caldo de verduras -350g de ciruelas pasas sin hueso -sal pimienta
Este es el, bueno los conejos.
Poner el aceite de oliva y la mitad de la mantequilla en la cazuela a fuego fuerte y colocar los trozos de conejo. Añade sal y pimienta.
Dar la vuelta a la carne y dorarla por todos los lados.
Cuando todos los lados se hayan dorado un poco, retire la carne de la sartén.
Colocar los lardones encima y asarlos también.
Picar la cebolla y los dientes de ajo.
Retirar el tocino y poner la cebolla y el ajo picados en la grasa. Bajar el fuego si es necesario para no quemar el fondo de la cazuela, ya que son los jugos del asado los que darán al plato un sabor fabuloso.
Cuando empiecen a tostarse ligeramente, añadir el resto de la mantequilla y la harina.
Remover con una cuchara durante 20 segundos y añadir un poco de caldo de verduras. Raspe bien el fondo de la cazuela para recoger los jugos de la cocción.
Luego un poco de vino blanco.
Mezclar enérgicamente. La salsa espesará muy rápidamente. Cuando ya no tenga grumos, puede añadir más líquido.
Colocar la carne sobre la salsa y todo el jugo que ha soltado, contenido en el plato.
Añadir los lardones (todavía con el jugo) y 250 g de ciruelas pasas.
Añadir el resto del caldo de verduras y el vino blanco.
Cerrar la olla y cocinar durante 45 minutos.
Transcurrido este tiempo, abra la olla, añada los 100 g restantes de ciruelas pasas y continúe la cocción entre 50 minutos y una hora.
Normalmente, en esta fase la salsa es suave. Por supuesto, hay que añadir sal y pimienta al gusto. Si quieres una salsa aún más suave (¡cuidado con que no se evapore todo!) puedes seguir cocinando la salsa sin la carne y añadirla al final. Sirve este plato caliente con patatas al vapor o pasta fresca.
